Marty's Ultimate Bean Dip

Ingredients:

  • 3 – 12oz cans refried beans
  • 1 – 12 oz can of red enchilada sauce
  • 3 small cans of sliced black olives
  • 3 small cans of diced green chiles
  • 2 cups cilantro – chopped
  • 2 cups green onion – sliced
  • 8 oz of shredded mexican cheese blend
  • 3 roma tomatoes – diced
  • 2 avocados – sliced
  • 1 large jalapeño – sliced
  • lemon juice – to taste
  • coarse black pepper – to taste

Directions:

  1. In a large casserole dish combine the refried beans and enchilada sauce. Distribute mixture evenly in the bottom of the dish with a spatula.
  2. Add the black olives, green chiles, green onion, and tomatos on top of the layer of beans.
  3. Add an even layer of the shredded cheese.
  4. Add the avocado slices on top of the cheese.
  5. Sprinkle cilantro, lemon juice, and black pepper evenly over top of the avocado.
  6. Top with jalapeño slices.
  7. Chill and serve with tortilla chips.
